APPLETON, Minn. – Clouds of steam rise on the north edge of town, above a low-slung industrial building surrounded by tall tanks and towers several stories high. Inside, a transition is underway from small family business to billion-dollar corporation. The sale of Del Dee Foods — which has operated in Appleton, in western Minnesota, for nearly 40 years — to San Francisco-based Just Inc. was announced recently. It's one step in what the company hopes will be a boon to the Swift County city and a disruption to the food industry. "This is great news for this area," said Lori Lind, who owns Del Dee Foods along with her husband, Mike, and her brother, John Droogsma. They've worked at the company for the last three decades. Lind's dad, Del Droogsma, whose legacy is reflected in the company's name, bought the factory in 1980 when he saw an opportunity to process and sell whey, a waste product from making cheese, as a protein for use in food products. That’s largely thanks to Popeyes, which released its highly-anticipated chicken sandwich in August that sparked the year's Chicken Sandwich War. The sandwich is a crispy fried chicken breast, topped with pickles, slicked with your choice of mayo or spicy Cajun sauce, and nestled on a brioche bun. BURGAW, NC (WWAY) — The annual Blueberry Drop in Pender County rang in the new decade Tuesday night as dozens came out to celebrate New Year’s Eve. This was the second time the event was held in Downtown Burgaw, but a new location was used. - Advertisement - Last year, the event was held at the Burgaw Train Depot, but an organizer says they had such a good response with about 1,000 people in attendance, they decided to move it Fremont Street. There’s nothing like starting off a shiny new year with a little challenge. The One Chicken Breast Challenge, or the OCBC as I’ve been calling it in my mind, will set you up for success. In the OCBC, there is but one rule: Only one chicken breast can be used in a meal to feed a family. Rules and structure are not my strong suit, so it’s really not my place to slap parameters around this challenge. Make it work to fit your needs. If you are one, you’ll have leftovers. If you are two, you’ll have a fine meal. If you are four or more, that’s where things get interesting. Why the OCBC? It forces us to fill the meat void. Ideally we’ll fill it with veggies and a side of self-righteousness — more vegetables are always good for fiber, for nutrients and for making us feel full without unnecessary calories.
