Schools celebrate Farm to School Month with from-scratch chicken noodle soup - KTVZ

BEND, Ore. (KTVZ) -- Next Monday, Bend-La Pine Schools will celebrate National Farm to School Month by serving up from-scratch chicken noodle soup, featuring carrots grown at a Tumalo farm, at free meal sites throughout the district. The effort is a partnership between Bend-La Pine Schools, a local farm and the Garden for Every School team at The Environmental Center in Bend.  “We are excited to showcase these locally grown and harvested carrots in our delicious homemade chicken soup,” said Garra Schluter, Nutrition Services supervisor. “We work hard to partner with local farmers, while providing the best food possible for our students.” The local carrots are just one example of how Bend-La Pine Schools works with local agricultural businesses. Every week, our schools serve 3,500 pounds of apples and fruit from orchards in Kimberly and 500 pounds of beef from ranchers in Fossil. With the arrival of fall, and hopefully chillier weather soon, also comes the season for soups that will warm you inside out. My favorite soup is the classic chicken noodle soup. It’s such a simple soup, but I love it. I’ve made my own for years now and it’s something my family actually asks me to make, whether they are feeling under the weather or if they’re just wanting soup. My version of chicken noodle soup is extra easy. I boil chicken in broth while also cooking chopped celery and carrots. I like my celery and carrots completely soft, so the cooking process takes a while. Then I shred the chicken and throw it back in the broth. I add pepper and some salt. In a large pot, heat the vegetable oil over medium heat. Add the onion, celery, and carrot and cook, stirring frequently, until the vegetables are soft, 4 to 5 minutes. Add the garlic, 1 cup (250 mL) of the nutritional yeast, and 1 tablespoon (15 mL) of the thyme. Cook, stirring constantly, until the garlic is fragrant, 2 to 3 minutes. Add the water and bring to a boil uncovered. Reduce the heat to medium-low and cook, uncovered, for 20 minutes. In a small pot of salted water, cook the spaghetti according to package directions. Drain and rinse in cold water to stop the pasta from cooking further. Remove the soup from the heat and stir in the parsley, the remaining ½ cup (125 mL) nutritional yeast, the remaining 1 tablespoon (15 mL) thyme, and the pasta. Serve immediately or cool and store in an airtight container in the fridge for up to 1 week.

The Department of Licensing and Consumer Affairs (DLCA) Division of Consumer Affairs notifies the public that on Tuesday, Aug. 18, the United States Department of Agriculture’s Food Safety and Inspection Service (FSIS) announced that Fairbult Foods Inc., a Fairbult Minnesota establishment, recalled approximately 15,000 of canned soup product due to misbranding and undeclared allergens. The cans labeled as chicken noodle soup actually contain a meatball and pasta product.  The canned soup items were produced on May 26, 2020, and bear an establishment number “EST18826A” printed on the bottom of the can under the “best by date.” These items were shipped to retail locations nationwide.  The following products are subject to recall: 14-oz. cans of “PROGRESSO ORGANIC CHICKEN NOODLE SOUP” with a best by date of “BestByMAY262022” printed on the bottom of the can and a best by date of “09JUN2022” print...

It’s been a minute, but we’re bringing back Dish of the Week as restaurants continue to open around the DMV.  I decided to check out Mala Tang in Arlington, Virginia, which is a six-minute walk from the Virginia Square Metro Station, on the Orange Line. Mala Tang’s name means “hot and numbing soup” in Mandarin and the restaurant offers Sichuan-style hot pot dinner.  Post-pandemic, you could order a large pot of a Sichuan peppercorn broth ($8.95) and various “mala bites,” or skewers of raw meats and vegetables like lamb and lotus root that you boil in the soup directly at your table (between $0.65 and $10 per skewer). Millers Creek United Methodist Church is conducting a food drive next week to benefit the Samaritan Kitchen of Wilkes summer backpack feeding program for children.  Non-perishable food will be collected at the Wesley Outreach Center (old Millers Creek United Methodist Church) at 4705 Boone Trail in Millers Creek.
