The Battle of the Pancakes – The Minnesota Republic - Kent Kaiser

Image
The humble pancake is the ultimate breakfast food. Who doesn't enjoy a stack of fluffy pillows doused in maple syrup and butter? It's a sweet treat that's easy to make and is always better made from scratch using fresh ingredients. But what if you're on a ketogenic diet? Pancakes are unfortunately very carb heavy and sugary, exactly what the ketogenic diet prevents you from eating. Don't worry – there's an almond flour pancake substitute that rivals the traditional pancake. Let's have a look at how these recipes compare: Traditional Pancake Ingredients: 2½ cups All Purpose Flour 1 tsp. Baking Powder 1 tsp. Baking Soda 2 tsp. Salt 3 tbsp. Sugar 2½ cups Buttermilk ½ cup Melted Butter 2 Eggs (Whites and Yolks separated) Steps: Combine the dry ingredients in a bowl and mix until combined. These ingredients include the flour, baking powder, baking soda, salt and sugar. Bonus points if you sift your dry ingredients. Add the buttermilk...

Roasted Filet Mignon with Spinach, Bacon and Potato Chips Recipe - Today.com

Image
Chef notes This dish was inspired by a meatloaf my father made as a kid. He was eating "healthy," so he made turkey meatloaf that was a combination of turkey, beef, spinach and some herbs. Then it got smothered in ketchup and bacon and cooked until glazed and gooey. Preparation For the sauce: Combine all ingredients in a bowl and whisk until homogenous. For the steak: 1. Preheat your broiler. Season the steaks liberally with salt. 2. Heat a heavy bottomed sauté pan to medium-high heat. When pan is ready, add olive oil to the pan. Carefully place the steaks in the pan and sear on each side for 3 minutes to achieve a nice and caramelized crust. Try to avoid moving the steaks around as they sear to create the best crust. 3. Once all sides have been seared, brush the steaks with steak sauce and place in the pan in the broiler for a few minutes (time will vary depending on your broiler). Brush the steaks with a second coat of steak sauce and return to the broiler for a few minu...

Lyons hopes to hand down cooking to kids - Philadelphia Neshoba Democrat

Image
By COLEMAN EAKES Food has always been a joy in Tarra Lyons' life.   When she was growing up, her family would watch the Food Network together. It was their favorite thing to do together, Lyons said. Lyons' mother, Yolonda, would let her and her brother Xavier help in the kitchen. Lyons, a lifelong Philadelphia resident, said she started cooking with her mom when she was 7 years old.   Now a mother of two boys, Jace and Korey, and her newborn baby girl, Xara, Lyons loves to cook for her own family, including her husband, Chris Lyons, who owns Lyons Heating & Cooling Services LLC in Philadelphia. Lyons loves all kinds of food but some stand out more than others. "Baked salmon with lemon Cajun butter and white rice," is among her favorite foods and would be her last meal is she had to choose. The recipe is included below. "I love anything with white rice and I love the flakiness of the salmo...

Katie Lee's Clam Chowder Dip in a Sourdough Bowl Recipe - Today.com

Image
Chef notes I love all the creamy, comforting goodness of clam chowder. The only thing that can make the classic soup even better is turning it onto a dip and serving it in a sourdough bread bowl! Having a serving vessel you can eat is just so much fun, plus the tangy, crispy bread pairs so perfectly with the velvety, rich dip. Preparation 1. Preheat the oven to 350 F. 2. Place the boule on a rimmed baking sheet and hollow out the center into the shape of a bowl (cut out about a 7-inch circle), leaving only about 1/2 to 1 inch of bread around the sides and bottom. Reserve the pieces of bread on the sides of the boule and tear or slice the pieces for dippers. 3. Mix the cream cheese, cheddar, sour cream, corn, Worcestershire, celery seeds, black pepper and 1/2 teaspoon seafood seasoning together in a large bowl until they are totally combined. Fold in the clams, bacon, red bell pepper, scallions and 2 tablespoons parsley. Transfer the mixture to the bread bowl and smooth the top into ...

Recipe: Red Beans and Rice - Eater

Growing up in Los Angeles, so much of what I ate for dinner was a hodgepodge of different cultures. On Tuesday nights, gringo-styled tacos with cumin-scented ground beef and chunky stripes of sharp cheddar cheese graced our tables. Friday nights? Well, those reliably meant that some sort of fried fish was on the menu. Sunday nights always belonged to soulful Southern classics like smothered pork chops, cider-braised collard greens, and gooey macaroni and cheese. Those Southern dishes reached back to Ringgold, Louisiana, the small town where my great-grandparents lived with their children. In the early 1940s they fled the state as a part of the Great Migration, which saw an estimated 6 million African Americans leave the South seeking refuge from racial terror. After they reached Los Angeles, my family settled in what was then farmland in Compton. As a child, it wasn't unusual for me to visit my great-grandparents for a feast and have enchiladas served with a steaming plate of g...

Garten recommended using a sharp peeler for removing the squash skin. "This is the quickest way, I find, to peel it," she explained. Then she cut the squash in half and sliced the end off, stood it on its end and cut it in half. "You can boil this — but instead I'm going to actually ...
