Tender Air fryer Chicken Breast without breading

Have you taken the plunge and treated yourself to an air fryer? Last year we bought an Instant Pot, which both Alan and I have enjoyed using.

This year, we bought the air fryer lid that goes with the Instant Pot. Coolest kitchen tool ever.

Now we can cook up "fried" foods without any grease or splatter. Plus, its really not like cooking with oil. Although you get the same tasty results.

In place of baking chicken, air fry chicken instead, and get the same nutritious results as you do from cooking it in the oven.

Although quite delicious with breading, air fried foods don't always need a breading to get that nice golden color that we love so much.

However, there is a few tips to getting golden and juicy chicken. The key to cooking air fryer chicken with no breading lies in the chicken marinade.

Simple, yet extremely flavorful chicken with fresh herbs, oil, and lemon juice.

I've been baking skinless chicken breasts without any breading in advance to make individual meals to enjoy for lunch.

The key to tender chicken is to make sure you marinade the chicken in advance. You will want the chicken to soak in the for about 4 hours.

Overnight if you have the time. Head over to this post for a healthy chicken marinade.

  • Remove chicken from marinade and place in your air fryer basket without overcrowding the chicken. For large pieces you may need to cook them one at a time.
  • Place lid on and press Air Fry button. Cook at 400°F degrees for 10 minutes, then flip the chicken and cook an addition 5-8 minutes or until the internal temperature reaches 165°F. Instant Pot Air Fryers will beep when it's time to turn the chicken over.
  • Note that if you don't use my marinade then you will need to coat the chicken with oil or cooking spray.

    Remove chicken from Air Fryer and let sit for 5 minutes before slicing, dicing or shredding.

  • ½ cup fresh lemon juice
  • 3 tablespoons Worcestershire Sauce (see notes for homemade sugar free recipe)
  • ¼ cup olive oil
  • 2 tablespoons fresh oregano, minced or 2 teaspoons dried oregano
  • ¼ cup fresh parsley, minced and lightly packed or 4 teaspoons dried parsley
  • ¼ cup fresh basil, minced and lightly packed or 4 teaspoons dried basil
  • 3 cloves garlic, minced
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Chicken
  • 2 pounds skinless chicken breasts
  • Instructions
  • Whisk together marinade ingredients in a medium size mixing bowl.
  • Put chicken breasts in a ziplock plastic bag or a container with an air tight lid.
  • Pour marinade over chicken and refrigerate for 4 hours - up to 24 hours.
  • Remove chicken from marinade and place in the basket of the Air Fryer. Don't crowd chicken.
  • Place air fryer lid on top of basket and push Air Fryer button.
  • Cook at 400°F degrees for 10 minutes, then flip the chicken and cook an addition 5-8 minutes or until the internal temperature reaches 165°F.

    Can I use chicken thighs?

    Yes! In this recipe I used boneless skinless chicken breasts but you can also use boneless skinless chicken thighs. Chicken things are dark meat and have more fat content so the texture and flavor will be a little different, but still delicious!

    Can I use premade pesto sauce?

    Yes! I like to make homemade pesto sauce to make this chicken but you can easily swap it out for store-bought pesto. There are several brands you can get from the store from shelf stable jars like Prego basil pesto sauce or you can find refrigerated pesto in the produce section of many grocery stores.

    Don't overcook your chicken-

    Depending on the size of your chicken, and your air fryer your cooking time may vary. Use a meat thermometer to check to make sure it is cooked to an internal temperature of 165. If you're unsure you can do a test batch with a few pieces to see how long to cook your chicken and get the right timing.

    Ingredients for Air Fryer Pesto Chicken

    1 lb chicken breast

    1 Cup of fresh basil

    2 tbsp pine nuts

    3 garlic cloves

    4 tbsp grated Parmesan Cheese

    1/3 cup olive oil

    salt, black pepper

    Here's how to make this Air Fryer Pesto Chicken

    To make the pesto–

    Place basil leaves in a food processor add pine nuts, grated parmesan, a pinch of salt and pepper, chopped garlic cloves.

    Pulse the food processor until the pesto is well blended.

    Add in olive oil gradually pulsing between additions until you have a smooth pesto

    Pat the chicken breast dry with paper towels, cut into small pieces and put in a bowl. Sprinkle with salt and pepper and stir to coat.

    Below are 12 recipes — some of which I had the pleasure of developing — that require very little prep time and result in a tasty meal for one or two. And, not only are they perfect for air fryer newbies and power users alike, they will, perhaps, convert even the biggest skeptics.

    Though they're cooked in an air fryer, which runs at very high heat, these boneless pork loin chops don't dry out, staying moist through and through. Even better? The crackly crust from a brown sugar, salt and spice blend that seasons the pork chops ahead of time. Air fryers work wonders with dry spices, so feel free to experiment beyond the cumin and coriander here. A pinch of crushed fennel or red-pepper flakes would be a welcome addition.

    Is this the platonic ideal of bacon? At the very least, it comes close. Whether you're cooking bacon for one or two, or just over making it in a fat-filled skillet, this recipe takes advantage of how the air fryer seamlessly drains fat and even works with frozen bacon — no thawing required.

    French fries have been attributed with catapulting the air fryer's popularity: The machine uses significantly less oil and reduces the cooking time (and mess) compared with traditional frying, making it especially ideal to cook fries. This Melissa Clark recipe is flexible enough that it can be easily doubled, but, depending on the size of your air fryer, you may have to cook the fries in batches.

The recipe borrows a tip from Ben Mims's cookbook "Air Fry Every Day": tossing the wings in baking powder before transferring them to the air fryer means that they come out perfectly puffed, crunchy and browned.

    These crispy potatoes are the perfect accompaniment to any main dish and can easily be executed in the time it takes to rest, say, your air fryer pork chop or chicken breast (see above). Even without any parboiling, the centers turn wonderfully creamy. And, if you don't have dried or fresh parsley on hand, any chopped fresh herb or spicy seasoning like cayenne could work deliciously here.

    Lighter than their deep-fried counterparts, sweet potato fries made in an air fryer lean toward the creamier side while staying crispy and charred in each bite. Swap out the paprika for any other spice that's singing to you: Chaat masala, sumac or any sort of fresh cut herbs would work beautifully.

    Here's another choose-your-own-adventure recipe. Broccoli is tossed with olive oil and soy sauce, but you can go in any direction from there: Add a whisper of fish sauce for some umami, or some chile crisp for heat and flavor.
