IngredientsThis recipe uses milk, but if you are lactose intolerant - then use soy milk. Or need a low calorie recipe? Using low fat milk is a good option or even nut milk will seve the purpose. For non vegtarians, add in a bit of diced bacon and enjoy

Creamy Forest Pasta With Mushrooms
In her cookbook "In Minutes," Clodagh McKenna says she can make this dish in 10 minutes. It took us a little longer, but not much. The creamy, earthy mushroom sauce that gives the dish its name comes together quickly. For the best flavor, cook the mushrooms until they dry out a bit and start to turn golden. If you're a meat-eater, feel free to add your favorite cooked sausage or chicken. You also can use dry tagliatelle or even fettuccine for this recipe, but it will take longer to boil.
Refrigerate for up to 5 days.
Packages of mixed mushrooms can be found at well-stocked supermarkets. Alternatively, you can make your own, with a combination of chestnut, oyster, portobello and shiitake mushrooms.
