Mutton Spring Roll Recipe
1.In a bowl, add Maida, salt, sugar, half of the oil and water to knead soft dough. Pat the dough with more oil and let it rest for some time.
2.In a pan add oil, chopped ginger and garlic, chopped onions, minced meat and soy sauce and ketchup. Add salt and black pepper and mix until cooked.
3.Roll very thin roti out of the dough, put the filling in the middle and roll tightly. Use a Maida and water slurry to close the roll.
4.Deep fry in hot oil until golden and crispy. Serve with a dip of your choice.

These are really pretty and easy to make. You can get rice paper wrappers in Asian shops or large supermarkets; you can get larger ones, about 9 inches in diameter, or smaller ones, about 6 inches. The filling here is enough for 1 packet of the larger ones, or 2 packets of smaller ones. I prefer working with the larger ones because they're quicker and less fussy, but the smaller ones are nice for a party.

Tip: You could serve the spring rolls with a red chili dipping sauce or hoisin sauce instead; both are available at supermarkets.

Sooji Spring Rolls Recipe
1.First take sooji in a bowl and fill it with half the amount of curd. Add some salt and water to make a smooth batter. Cover and keep aside for 15-20 mins.
2.Now, mash boiled potatoes, add salt, chaat masala, red chilli powder, coriander powder, garam masala and coriander leaves to it.
3.Heat oil in a pan, saute some onions, ginger and green chillies.
4.Add veggies like carrots and capsicum, and cook till soft. Add mashed potato mixture and mix well. Turn off the gas after 2 minutes.
5.Now make wraps for the rolls just like you make cheela on a flat tawa. Make sure the cheela is paper thin. Cook from both the sides.
6.Stuff the cheela with aloo stuffing and cut the rolls into smaller pieces.
7.Serve it with chilli sauce and enjoy!
