Ingredients

For the Chicken: 2 boneless, skinless chicken breasts

1 tbsp olive oil

1 tsp cumin

1 tsp chili powder

1 tsp garlic powder

Salt and pepper, to taste

For the Pineapple Salsa: 1 cup fresh pineapple, diced

1/4 cup red onion, diced

1/4 cup cilantro, chopped

1 jalapeño, seeded and diced

Juice of 1 lime

Salt, to taste

For the Bowl: 2 cups cooked brown rice

1 can black beans, drained and rinsed

1 avocado, sliced

1/4 cup sour cream or Greek yogurt (optional)

Fresh cilantro for garnish

Instructions

1) In a small bowl, mix the olive oil, cumin, chili powder, garlic powder, salt, and pepper. Rub the mixture over the chicken breasts. Heat a grill pan or outdoor grill to medium-high heat. Grill the chicken for 6-7 minutes on each side, or until fully cooked (internal temperature of 165F). Let the chicken rest for 5 minutes, then slice.

4) Serve immediately and enjoy the fresh, tropical flavors of your Pineapple Salsa Burrito Bowl
