Italian American Restaurant Coming To West Fargo

WEST FARGO — A new restaurant called Ziti's Italian American plans to open in West Fargo sometime in June.

That's according to Gabby Metzger and Pat Lipsiea, who are in the process of setting up Ziti's at 3150 Sheyenne St., Suite 170, in The Lights development on Sheyenne Street.

The space was formerly home to Tati's Mediterranean Saveur.

Ziti's, a new Italian American restaurant, will be located in Suite 170 of The Lights in West Fargo.

Ziti's will offer lunch, dinner, catering, a full bar, homemade desserts and more, according to Metzger and Lipsiea, who are partners in life as well as in business.

As they navigate the necessary licensing and other paperwork that comes with opening a restaurant, Lipsiea said it's been a bit tough to nail down a firm opening date.

For now, he said, they're aiming for the end of June.

When Ziti's does open, the couple say it will offer diners a comfortable and affordable getaway from the stress of everyday life, with food made from scratch and decor that will be warm and welcoming.

"We just want to have a spot in that neighborhood close to our home, where you can kind of leave the day at the door and just shut the world off a little bit," Metzger said.

Both Metzger and Lipsiea have backgrounds managing higher-end casual dining restaurants, including Doolittle's and Porter Creek.

More recently, they both worked for Suite Shots, an entertainment complex offering a restaurant and lounge as well as a golf driving range and simulators.

Lipsiea and Metzger said they enjoyed their work at Suite Shots — Lipsiea remains a consultant for the brand — but the couple say their latest endeavor feels closer to home for them.

"We both kind of yearn to get back to something a little closer to our hearts, something that comes a little more second nature to us," Lipsiea said.

As they gave visitors a tour of the space that will soon become Ziti's, Metzger and Lipsiea described their plans for making the restaurant comforting and inviting while offering a personal touch as well.

The walls, Metzger said, will be adorned with black and white photos telling the story of their family histories.

In addition, an area near the entrance will be dedicated to the memory of their late fathers — Terry, in the case of Metzger, and Kelly, in the case of Lipsiea.

According to Lipsiea, hospitality and the restaurant life has long been a part of his family's history.

"A generational curse," he said with a smile, adding that even more than the Italian cooking, what they really want to do "is provide that whole hospitality experience, from the service to the ambiance. Gabby is working extraordinarily hard on the colors on the wall."

Metzger said they feel good about the spot they found for Ziti's, noting that it is very close to their home.

"We took a long time to find the right location that felt right for everybody," she said.

Baked Ziti

  • Stir the sauce, 1 cup mozzarella cheese and ziti in a large bowl. Spoon the mixture into a 2-quart shallow baking dish. Sprinkle with the remaining mozzarella cheese and Parmesan cheese.
  • Bake at 350°F. For 30 minutes or until the mixture is hot and bubbling.
  • Tip: To freeze, prepare the ziti but do not bake. Cover it tightly with foil and freeze. Bake frozen ziti uncovered at 350°F. For 1 hour or until hot and bubbling. Or refrigerate frozen ziti for 24 hours to thaw. Bake thawed ziti uncovered at 350°F. For 45 minutes or until hot and bubbling.

Tip: For 8 servings, double the recipe. Spoon into a 3-quart shallow baking dish and bake for 45 minutes or until hot and bubbling.
