Banana Pudding Fluff

Banana pudding fluff and traditional banana pudding have a lot in common: plenty of banana flavor and banana slices to bite into, nilla wafers that soften in the custard, and creamy vanilla-scented pudding. But the whipped cream that's stirred in gives it the "fluff" in its name, a mousse-like texture. Mini marshmallows also soften into squishy, fluffy bits (similar to the way they do in ambrosia or millionaire's salad).

For rich banana flavor in every bite, mash one of the bananas, and stir it into the pudding. This gives much better banana flavor throughout than using banana-flavored pudding mix (which always tastes artificial).

Banana Pudding While this recipe combines many of the elements of traditional banana pudding, it's different in these ways: Instead of layering vanilla custard, banana slices, and nilla wafers, and then topping with whipped cream like a traditional banana pudding recipe, this dish combines all of those elements together. The whipped cream gives the pudding more of a mousse-like texture than a pudding texture, but the nilla wafers soften in a similar way that they do in old-fashioned banana pudding. This dish folds in mini marshmallows, which traditional banana pudding doesn't include. Recipe Tips For Banana Pudding Fluff Choose ripe bananas that still aren't completely mushy; it's best if they still have a little bite to them. Because we toss the banana slices with lemon juice, they won't brown as quickly. Opt for the family-sized box of pudding mix. Toasted pecans offer some crunch to contrast all the soft textures in the dish. You can sometimes find pre-toasted pecans near the produce section (or with the other nuts at Trader Joe's). You can make this up to one day ahead. Just know that the nilla wafers will soften more and more as the dish chills. Be sure to follow the order in the method. You want the banana slices to sit with the lemon juice for a few minutes, so toss that mixture together and let it stand while you whip the cream. Though vanilla wafers are traditional, you could use crumbled shortbread cookies or pecan sandies if you prefer. Paige's Kitchen: Light Strawberries And Whipped Cream Dessert

GAINESVILLE, Fla. (WCJB) - The recent hot temperatures might have you searching for a light dessert. A cool plate filled with fresh whipped cream and ripe strawberries is one way to accomplish that feat.

The recipe is very simple. It reminds me of wonderful afternoons spent with friends, swirling strawberries in whipped cream as we shared summer childhood memories.

If you don't want to make homemade whipped cream, you can substitute a can from the grocery store.

But "real" is where it's at for maximum flavor. I included a link below the recipe where you can read about the whipped cream dispenser. It's a kitchen investment you won't regret. Enjoy!

Ingredients:
  • Whipped cream
  • 1 pint fresh strawberries-cleaned and capped
  • 1 4oz bar of semi-sweet Ghiradelli chocolate bar
  • Chocolate sauce (optional)
  • Mint leaves for garnish
  • Instructions:
  •   Chill a large platter. Totally cover the platter in a swirling pattern with the whipped cream.
  • If you are making the whipped cream using a dispenser, add 2 tablespoons powdered sugar and 1 tsp vanilla and follow the dispenser directions.  
  •  Use a vegetable peeler on the chocolate bar and create tiny curls over the whipped cream.
  • Place strawberries with pointed side up gently into the whipped cream.
  • Garnish with mint leaves.
  •    Serve immediately.
  • Note: If you want to add the chocolate sauce. Place sauce in a crisscross pattern on the plater BEFORE adding the whipped cream.
