Parmesan Yellow Squash Rounds - Oh My Squash Recipe by Georgia Organics

For more lesson plans, activities, recipes and resources, sign up for October Farm to School Month at bit.ly/ohmysquash Ingredients: 2 yellow squash, sliced into ½ in rounds 2 Tbsp olive oil 1 cup breadcrumbs (regular or panko) 1 cup grated Parmesan cheese Black pepper to taste Cooking oil spray Marinara sauce or plain yogurt + olive oil for dipping School garden-grown herbs, chopped (optional) Directions: 1. Preheat oven to 450° F. Line your baking sheet with a cooling rack. 2. Put squash slices and olive oil in a large plastic bag; shake to coat squash evenly with oil. 3. In a separate bowl, combine the breadcrumbs, Parmesan cheese, and pepper. 4. Dip slices of squash in the cheese mixture, coating both sides. 5.Place the squash in a single layer on the rack on the baking sheet. 6. Lightly spray each slice with cooking spray. 7. Bake for 15-20 minutes, depending on the size of your squash rounds (Topping will be brown and crispier if you bake them on the top rack of your oven.). 8. Finally, serve with marinara sauce and/or plain yogurt and olive oil dips topped with school garden-grown herbs (optional)!
