Cauliflower Stands In For Rice At New Delivery-Only Sushi Spot - Los Angeles, CA Patch

LOS ANGELES, CA — Chef Ei Hiroyoshi could not have predicted the coronavirus and its crushing fallout on restaurants when he planned to launch his new Los Angeles-based, low-carb sushi business, Skinny Fish.

"I never imagined I'd be introducing Skinny Fish during a global pandemic," Hiroyoshi said. "My team and I went back and forth about delaying, but ultimately decided that now more than ever, we're in a unique and fortunate position to be able to contribute to the community."

"People need nourishment, people need to stay home, and people need to work — including the vendors who supply our fish and produce — and Skinny Fish can help support all three," he added.

Skinny Fish did, indeed, open this week as a delivery-only restaurant based west of downtown Los Angeles. The delivery radius should include — depending on the app used — Culver City, West Hollywood, Beverly Grove, Fairfax, La Brea, Miracle Mile, Mid-Wilshire, Mid-City, Koreatown, HiFi, Hollywood, East Hollywood, Los Feliz, Silver Lake, Echo Park, Chinatown, DTLA, Pico Union and South LA.

A former sushi chef at Sasabune, Hiroyoshi has more than 20 years experience in the Japanese restaurant industry, which helped fuel his cauliflower-rice recipe — the secret ingredient behind his low-carbohydrate sushi menu. The chef adapted traditional sushi rice techniques to make his cauliflower rice, which replaces traditional rice in his rolls and bowls, and, he claims, is superior to cauliflower rice sold in grocery stores.

"I've always strived to take the concept of 'omotenashi' (Japanese for 'hospitality') to the next level, and taken pride in understanding what individuals really want and like — and using my skill set as a chef to innovate and cater to them," he said. "In this case, the challenge was to meet the demand of customers craving low-carb, but equally delicious, alternatives to sushi bowls and rolls."

In development for more than a year, the Skinny Fish menu offers signature cauliflower-rice bowls and California- style sushi rolls, including:

  • Salmon Sashimi Bowl: sustainably caught salmon sashimi, cauliflower sushi rice topped with sesame seeds, organic mixed greens, cucumber, avocado, wakame, lemon, edamame and pickled radish
  • Shrimp Bowl: sustainably caught shrimp, cauliflower sushi rice topped with sesame seeds, organic mixed greens, cucumber, avocado, wakame, lemon, edamame and pickled radish
  • Seared Albacore Sashimi Bowl: seared, sustainably caught albacore sashimi, cauliflower sushi rice topped with sesame seeds, organic mixed greens, cucumber, avocado, wakame, lemon, edamame and pickled radish
  • Grilled Salmon Bowl: grilled, sustainably caught salmon, cauliflower sushi rice topped with sesame seeds, organic mix greens, cucumber, avocado, wakame, lemon, edamame and pickled radish
  • Combination Bowl: shrimp, salmon, albacore, cauliflower sushi rice topped with sesame seeds, organic mixed greens, cucumbers, avocado, wakame, lemon, edamame and pickled radish
  • Salmon Roll: cauliflower rice with cream cheese, salmon, and avocado
  • Ebi Cream Roll: cauliflower rice with cream cheese, boiled shrimp, avocado, and cucumber
  • Kani Roll: cauliflower rice with avocado and blue crab
  • Negi Toro Roll: cauliflower rice with avocado, toro and green onions
  • Appetizers and sides including edamame and miso soup
