DIVAS ON A DIME: Easy pork carnitas are perfect for Cinco de Mayo - pvtimes.com DIVAS ON A DIME: Easy pork carnitas are perfect for Cinco de Mayo - pvtimes.com Posted: 30 Apr 2021 07:23 AM PDT Melt-in-your-mouth, flavorful and juicy with irresistible caramelized crunchy bits, this pork carnitas is brimming with classic flavors like Mexican oregano, cumin, chili powder and a surprising bright note of citrus. I'm so excited to share this divine recipe, just in time for Cinco de Mayo. Carnitas means "little meats" in Spanish and is Mexico's version of pulled pork. This recipe yields restaurant quality pork at a fraction of restaurant costs. It uses very inexpensive cuts of heavily marbled pork that is slow roasted for hours (or cooked in a pressure cooker, instructions below) until the meat is completely tender. The pork is cooked so well it completely falls apart and practically shreds itself. Before serving, the meat is broi...

A Year of Cooking With My Mother - The New York Times A Year of Cooking With My Mother - The New York Times Posted: 30 Apr 2021 10:46 AM PDT Let the record show that I make a terrible roommate. I can still hear my mother's voice as she encountered the sink full of dishes, the counter spilling over with spices and syrups: "I can't live like this!" About nine months ago, I moved back home to Atlanta to write a cookbook with my mother, Jean. A couch-surfing freeloader, I was only supposed to be there for a couple of months to work on the kimchi chapter, a selection of heirloom recipes I would never have been able to develop over the phone from New York, where I live now. But as each month passed, I found more and more excuses to stay. By cooking with Jean in such a structured, quotidian way, I was able to stop time, a compelling state for an anxious mind like mine. I could finally slow down and ask her questions about ...

What caused it, and what can I do to prevent it this year? At first glance I thought this had been caused by caterpillars, but then I decided to Google "Texas A&M plant pathology bacterial leaf spot Mexican plum." Sure...

What to Cook This Weekend - The New York Times What to Cook This Weekend - The New York Times Posted: 09 Oct 2020 12:00 AM PDT Good morning. I went to high school near La Caridad 78, a Cuban-Chinese restaurant on the Upper West Side of Manhattan that closed in July, a victim of the coronavirus. I ate there so often I'm hard-pressed to put a number to it, most happily with the architecture critic Michael Kimmelman, who loved the place probably more than I did, and I loved it a lot. This weekend, at long last, I intend to pay homage to the restaurant's memory, and make my favorite Caridad meal: pork chops in black bean sauce, with yellow rice, black beans and a platter of maduros. Won't you join me? You won't be sorry. We have an ace recipe for maduros (above), thanks to Kiera Wright-Ruiz. Make those and keep them warm in the oven. Easy. You can crisp them up again just before serving. The rice and beans are also simple...
