June 27 (UPI) -- National Ice Cream Cake Day, celebrated annually on June 27, was started by a Florida family to pay tribute to their mother. The holiday was first suggested by Jenna Jurado, whose mother, Johanna Jurado, died in a car accident just two months before her June 27 birthday. Jurado said her mother enjoyed celebrating unofficial holidays from the National Day Calendar, so she decided to submit her own holiday in tribute to her mother, who was a noted fan of ice cream cakes. The National Day Calendar accepted Jurado's petition and declared June 27 to be National Ice Cream Cake day. Since tzatziki is Greek yogurt plus a few extra ingredients and seasonings, it works just as well as a mayonnaise substitute in any egg salad. For best results, Cabot Cheese recommends a half cup of tzatziki per six hard-boiled eggs, but as Livestrong explains, Greek yogurt and mayonnaise can be swapped at a perfect one-to-one ratio, so you can use any egg salad recipe without tweaking the other ingredients. Just replace the mayonnaise with tzatziki and you can transform any egg salad.
