Hoisin Noodles

Drain the noodles and spinach well before returning them to the pan. Stir in the sauce and the spring onions. The spinach should contain enough residual water to help the sauce cover the noodles, but you can always add more of the reserved cooking water for a looser sauce. However, be careful not to make it too watery.


Hoisin Chicken With Pancakes

Place the chicken in the prepared tin and season well with salt and freshly ground black pepper. Pour any excess marinade from the bowl over the chicken. Roast in the oven for about 1–1¼ hours, covering the chicken with kitchen foil after the first 30 minutes, until cooked through. The chicken is cooked through when the juices run clear with no trace of pink when the thickest part of the leg, between the drumstick and the thigh, is pierced with a skewer. Expect the skin to be very dark brown, almost black, but not burnt. Leave the chicken to rest for 15 minutes, covered in the foil.

Ingredients:

  • 1 teaspoon sesame oil
  • 1/4 cup onion, diced
  • 2 tablespoon fresh ginger, minced
  • 1 tablespoon fresh garlic, minced
  • 3 cups Oregon blueberries, frozen
  • 1/3 cup honey
  • 1/4 cup hoisin sauce
  • 1/4 cup soy sauce
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped
  • Directions:

  • Saute onions, garlic and ginger in sesame oil until tender.
  • Add all other ingredients except lime juice and bring to a brief boil. Reduce heat and simmer for 5 minutes.
  • Remove from heat and cool. Add fresh lime juice. Puree if desired to thicken.
  • Toss hot prepared chicken wings in blueberry sauce and serve. Garnish with cilantro and sesame seeds if desired.
