To make the filling, combine the cornflour and sugar in a saucepan, then stir in the lemon juice and 300ml/10½fl oz water until smooth. Bring to the boil, stirring frequently, until the mixture thickens. Reduce the heat, simmer gently for 1–2 minutes, then remove from the heat and immediately stir in the egg yolks. Leave to cool a little.
Lemon Meringue Icebox Pie
This is the first pie I ever made, and it quickly became the pie of my childhood and my dreams, an obsession that took years to get under control. It was a long time before I could find a way to be in the same room as a graham cracker crust filled with lemony goodness and not lose my mind.
All you need to know is that this is the easiest pie you'll ever make. You literally can't mess it up. It is the perfect dessert after a spicy or robust meal. It's also a great pie to have on hand when you're making something new and untested. No matter what the result of your culinary adventures, this dessert will save the moment and will be all anyone will talk about. That's a recipe worth committing to memory, don't you think?
Grapefruit And Ginger Meringue Pie
In a separate heatproof bowl, add the yolks, eggs, sugar, cornflour and salt. Whisk to combine then set the bowl over a pan of gently simmering water (do not allow the water to touch the bowl). Pour in the grapefruit juice and whisk the mixture for about 15 minutes, or until it starts to thicken. Add the butter piece by piece, whisking all the time for about 15 minutes, or until the mixture is very thick. (If the mixture is taking too long to thicken, transfer the mixture to a pan and heat gently until thick.) Place some cling film on the surface of the curd to prevent a skin forming and set aside.
