Cooking For Two? These Easter Dinners Are Perfect For When You Don't Want A Fridge Full Of Leftover Ham
18 Easter Dinner Recipes That Are Perfect For Two PHOTO: ANDREW BUI; FOOD STYLING: FRANCESCA ZANI
Some years, hosting a big dinner for Easter is just not in the cards, either due to plain ol' preference, table-capacity, or simply not wanting a fridge full of leftover ham (been there!). Lucky for you, we've got plenty of recipes that are perfect for a small-scale gathering on the big day, all without scrimping on any of your favorite holiday dishes (ahem, cheesy potatoes in all their many forms). So if you're planning on serving up an Easter dinner for two (okay, maybe three at max), you're going to want to bookmark all 18 of these clever recipes and ideas.
The secret perk of setting a smaller table at Easter? You get to make only the dishes you (and your +1) want to eat! The sky's the only limit. Don't want to spend the whole day in the kitchen cooking a spiral ham? Make our chicken dijon, salmon piccata, or roasted pork tenderloin instead! More in the mood for a one-pan wonder that'll let you move on with your day (without all the dishes)? Our one-pan chicken bacon gnocchi or primavera baked orzo are just the recipes for you. Only want the sides? Look no further than our potatoes au gratin stacks, bacon pea salad, and air fryer asparagus. That being said, we understand wanting a little bit of the classics for Easter (but not a whole fridge's worth), in which case you'll love our simplified sheet-pan Easter dinner that has all the non-negotiable dishes all on one pan.
Looking for more ways to make your Easter meal super memorable? Check out all of our best Easter cocktails, Easter sides, and Easter desserts next.
Roasted Pork TenderloinIf you're tired of old standbys like a whole chicken or ham for your holiday meal, look no further than pork tenderloin. It's quick-cooking, takes extremely well to countless flavors, and is easy enough for a chill family meal but remarkable enough for a special Easter dinner too.

Peas & CarrotsA quick side dish is always appreciated, especially one as easy as this combo. It goes well with your steak dinners, your rice & beans, or your vegan meatloaf, but if you really love your peas and carrots, you could just eat this in one sitting, as a meal (we have! 😉).

Primavera Baked OrzoThis spring-y, one-pan dinner proves that the creamy, subtly sweet flavor of fresh mozzarella plays very nicely with similarly delicate spring produce like shallots, sugar snap peas, and oyster mushrooms. Paired with al dente orzo and a light cream sauce, this hearty dinner is the perfect way to celebrate the return of longer days and warmer temperatures.

Salmon PiccataA knockout of a meal, chicken piccata also a couldn't-be-easier dish—it comes together in one pan, and you don't need a quintillion ingredients to make it. But we're here to talk about and convince you to make salmon piccata. It's just as easy as its brethren, and we argue that our method for it is even easier.

Potatoes Au Gratin StacksWith thinly sliced potatoes and a creamy cheese mixture, it's easy to see why this is a recipe that completes practically any dinner spread. No casserole dish needed here—a muffin tin, Russet potatoes, two types of cheese, heavy cream, and staple seasonings are all you need to create these cheesy stacks.

Air Fryer AsparagusWith minimal time and practically zero effort (thanks air fryer!), you can have asparagus ready faster than your oven could even preheat. With a teaspoon of olive oil and a little lemon juice to brighten it up, you have a quick and healthy side ready to go.

Salmon En CrouteThis recipe is big on elegance, flavor, and wow factor. Salmon en croute is just a French way of saying "in a crust" (puff pastry in this case). Everything is nestled together in the dough, and after about 30 minutes in the oven, you'll have a buttery, flaky crust with perfectly tender salmon inside.

Garlic-Parmesan Roasted CarrotsThis recipe made us wonder, Why don't we roast carrots more often? When they roast, their flavor concentrates and sweetens. Pair that with copious amounts of umami-packed Parmesan and just a touch of lemon, and you've got a super-irresistible dish that you'll come back to again and again.

Get the Maple-Glazed Ham Steak recipe.
