Add Coriander leaves, almonds, green chilies, ginger, and garlic in a food processor and blend it onto a coarse mixture.
Add the remaining ingredients, excluding the oil and breadcrumbs, along with the cooked and mashed Arbi.
To suit your tastes, check the salt and spice levels and make adjustments.
Arbi is a very starchy vegetable, so keep a small bowl with a spoonful of oil to stop the Kabab mix from sticking to your fingers. As you form the Kabab dough into round discs, grease your palms and fingers.
Once Kababs are made, coat them with bread crumbs before placing them on a platter to fry.
Set a pan to medium-high heat and oil the pan generously before cooking the Arbi Ke Kababs.
Place the Kababs on the pan and cook until golden brown and crisp on both sides.
Serve right away with Green Chutney.
