Frosted Gingerbread Cookies Recipe And PhotosPS Food

Gingerbread cookies are a staple of the season, but I'm not talking about the hard, crunchy, store-bought kind. The best gingerbread cookies can easily be made at home, and each bite will be chewy and flavorful, with the perfect balance of spice. Oh, and did I mention they're all smothered in creamy frosting? If you love gingerbread cookies but haven't been able to find the perfect recipe, look no further.

This recipe incorporates some of the best flavors of the season with cinnamon, cloves, and, of course, ginger. With a simple spice lineup, the flavor of the ginger is really highlighted with every bite, so the cookies are not too sweet and not too spicy. And topped with cream cheese frosting, these cookies accomplish an impeccable balance of flavor and decadence. If you're looking for a dessert to try out for the holidays or you simply want to make a batch for yourself (we did), once you try this recipe, you won't want to ever try another one (sorry, gingerbread people).

When it comes to holiday sweets, gingerbread is a classic. While yes, the warm and zesty flavor can help put you in the holiday spirit, there are some key health benefits to consuming ginger before or after your next jingle jog.

"Ginger has anti-inflammatory properties, and cinnamon has been shown to block some of the absorption of sugar," says Taylor Wallace, Ph.D., professor of nutrition and food studies at George Mason University. Even better for athletes, daily consumption of ginger reduced exercise-induced muscle pain in a small Journal of Pain study.

As for gingerbread cookies, they usually contain molasses (still a sweetener, but molasses have more minerals than refined white sugar, including iron and calcium) and antioxidant-rich cloves. We suggest skipping the sugar-laden royal icing and letting the spicy flavors shine on their own.

It's worth noting that you'd need to eat a lot of cookies to see any major magic (and at that point, #sugarcoma), but Wallace says there's another big benefit to baking some gingerbread. "You need less sugar since the flavors of ginger, cinnamon, and cloves are so distinct on their own," he explains. And don't get us wrong, we wouldn't exactly call cookies a health food, but if you're going to carb-load before a run, you might as well eat something fun and festive, right?

Below, Wallace shares a gingerbread recipe from his upcoming cookbook, Sizzling Science (available on Amazon, January 2019). "These gingerbread cookies are a great pre-running snack to help maximize performance," Wallace says. Grab a few to fuel your next run. Not a baker? No problem. There are plenty of other ways you can power up with the power of ginger:

Gingerbread Cookies Recipe Ingredients:

3 cups all-purpose flour 1 ½ teaspoons baking powder ¾ teaspoon baking soda ¼ teaspoon salt 1 ½ tablespoons ground ginger 2 teaspoons ground cinnamon ½ teaspoon ground cloves 6 tablespoons unsalted butter ¾ cup dark brown sugar 1 large egg ½ cup molasses 3 teaspoons pure vanilla extract

Directions:
  • In a small bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves until blended.
  • Use a separate large bowl to beat butter, brown sugar, and egg on medium speed until well blended.
  • Add molasses, vanilla, and lemon zest and continue to mix. Gradually stir in dry ingredients until blended.
  • Divide dough in half, wrap each half in plastic, and let stand at room temperature for at least 2 hours or up to 8 hours.
  • Preheat oven to 375 degrees. Prepare baking sheets by lining with parchment paper.
  • Place 1 portion of the dough on a lightly floured surface. Sprinkle flour over dough and rolling pin.
  • Roll dough about ¼ inch in thickness. Use additional flour to avoid sticking.
  • Cut out cookies with desired cutter or roll into balls for round cookies. Space cookies 1 ½ inches apart on parchment paper.
  • Bake one sheet at a time for 7 to 10 minutes (less time will give you softer cookies). Remove from oven and allow the cookies to stand until firm. Serve.
