It's often found in five-spice mixes, and I remember my grandfather's pork belly stew as one of the foundational childhood dishes that forever cemented my love for cinnamon.  It was a funny moment of culture shock when my parents first discovered cinnamon was used as a prevalent sweet spice in so many North American desserts. To this day, they still can't fully enjoy things like snickerdoodle cookies and cinnamon rolls and are wary of being ambushed by the presence of cinnamon in sweets. We can’t say this is the same recipe, but it is a very delicious margarita, made with agave wine instead of tequila. (Agave is same source plant for both the wine and the liquor.) I took to The New York Times Magazine this week to write about a remarkable 20th century restaurateur named Henri Charpentier, who was raised in the kitchens and dining rooms of the French Riviera, labored under Auguste Escoffier and César Ritz in Paris, and moved to New York in the early 20th century, where he opened his restaurant Henri's, in Lynbrook. One of the dishes Charpentier served there showed up in a cookbook my friend Julie found in a used bookstore in the Midwest a few years ago: fluke au gratin (above). It's a remarkable, elegant dish, and a simple preparation appropriate to any firm, mild white-fleshed fish.
